Slow Roasted Chicken
This is super easy and awesome (especially if you’re lazy like me and buy pre-chopped vegetables from Whole Foods). I make it in my crockpot so it will cook overnight and be done when I wake up.

3.5 lb whole chicken
1 large onion, chopped
4 carrots, chopped
5-10 cloves garlic, peeled
1 lemon (organic – no pesticides in this!)
2TB butter
1TB poultry seasoning (I like Penzey’s – right now, get 2-day shipping for the same price as regular, enter code WINTER at checkout and get a free 4-spice gift box)
1/2TB cayenne
1TB salt
1/2TB pepper

Wash chicken inside and out and dry with paper towels. Mix spices in small bowl, adjusting ratios to suit your taste.

Spread onion and carrot mixture across bottom of crock pot. Layer garlic cloves on top.

Cut butter into small cubes and push between chicken breast meat and skin. Shove halved lemon into chicken’s cavity. Rub spice mixture over entire bird. Plop chicken on top of vegetables, breast side down, in crock pot. Cover and cook on low for 6-8 hours.

No liquid needed – the chicken will be juicy. (You can make an herb butter by mashing together fresh thyme and parsley with your butter, but there’s no need.)
